I've got an house full Christmas Day about 18.Turkeys alright so got a Turkey crown for the kids and the other wierd'os.
Most of my lot asked for a rib of beef.in my humble it pisses all over turkey.
On a personal note the Boxing Day lunch with cold meat,bubble and pickles is the best bit of grub of the year.

Fuzzy's Grub roast dinner sandwiches are where it's at.
Yorkshire pudding, roast potatoes, stuffing, veg, meat of your choice and gravy all in two bits of doorstep bread. Its a thing of beauty and the greatest sandwich ever made. I normally pull out my own version on Boxing Day with the old Crimbo left overs!!!

Love home made cranberry sauce. Add orange zest and juice and you have a proper tart sauce that cuts through the grease and umami.

I have brown sauce, mustard, mint and Worcester on all roasts, whatever the meat, i'll even dollop horseradish on as well if we have any. Drives Mrs V insane.

A good bread sauce is fantastic and is easy to make.
1. Bring milk to the boil, add one or two chopped onions and a load of cloves, and a bay leaf. Simmer for a couple of minutes, then leave to cool for an hour or two.
2. Strain the milk to remove the onions, cloves and bay leaf.
3. Add white breadcrumbs to your desired consistency, and a little butter.
Voila.

I agree with those three, but cranberry...? Take it or quite easily leave it.
Nurse, I did notice an earlier reference to Christmas dinner. Now clarified.
This serf will be having Christmas lunch.

What sauces do benefit a roast though?
Bread sauce for chicken and turkey
Apple sauce for pork
horseradish sauce for beef.

It doesn't. Either sweetened or not. It's foul stuff.
We have Christmas DINNER in our house (albeit an hour or so earlier than usual) because none of us can eat the main meal of the day at lunch time. We don't toil in the fields like medieval serfs.

Cranberry sauce without sweetener, which is very tart, is much better than the shop-bought stuff. It has to be used sparingly, as it is too strong-tasting to be pleasant otherwise.
